Sriracha

I was introduced to “Rooster Juice” (a.k.a. Sriracha hot chili sauce) back in 1992 when I would dine at my Platoon Sergeant’s house. His girlfriend was a flight attendant on Singapore Airlines and one hell of a good cook and every time she was in town she would lay out the best tasting, and hottest, Thai food I ever had (honest to God we would sit there eating saying “This is great, this is great, I’m gonna die I’m gonna die…”)

Anyway, one of the condiments that always went with her food was a bottle of Sriracha hot chili sauce. Essentially ground chili peppers with a few other ingredients to round out the palate, this sauce is absolutely devastating with rice or any other tomato based pasta dish. As an added bonus, it doesn’t require refrigeration on opening, so it’s ok for use in the field.

P.S. I started calling it rooster juice after trying to describe it to someone over the phone. I wasn’t exactly sure of the name so I just said, “look for the clear bottle with the red sauce, green cap and the rooster on the front.”

Oh yeah - that stuff is HOT - VERY hot, and tasty. They have it on the counter at work next to the ketchup and the like - I remember the first time I tried it - no one warned me. I thought I was going to die

I try to share this stuff with everyone I come in contact with. I first tried it at a local Vietnamese cafe and have been hooked for the past 6 years, there's always a bottle at my house, and even if my salt shaker is empty this thing dominates the center of my table.

It's hot, but it has a great garlic flavor ... and the consistency (thick) makes it work on almost anything, it stays where you put it.

Just remember to give the bottle a brief shake before putting it into action.

Note: this stuff is not as rare as the above noted link seems to imply, in the past few years it is spreading out dramatically or maybe I just never noticed it before. When I first bought it I had to go to major Asian markets, but now I see it in other places including Kroger and even Wal Mart stores.

Add to your list a product called sambal oelec. It can be found in any Saigon based grocery store. Spoon quickly or the spoon will melt! It is made from a small red pepper found along the MeKong delta.USE WITH CAUTION!!!

This is the best hot sauce I've ever had. There is absolutely no trade off between heat and flavor here. This stuff also makes for an incredible bloody mary.

I wouldn't say it was 'very hot.' It's a medium, or even mild hot sauce. This is a general-purpose hot sauce, a little bit sweet and garlicky. A little bit hotter than Frank's Red Hot, about as hot as Tabasco. Great on pretty much everything - tortilla chips, eggs and has browns, Asian food, hot dogs... You can put this on almost anything you'd put regular hot sauce on. It's fucking great, and I'm glad it seems to be getting more popular.

That's good stuff.... you should also try the chili paste with the seeds in it...it comes in a jar that's about half the size of the sriracha... They have it at ALL Vietnamese restaurants and most Thai spots. I dropped a little in my pasta with meat sauce last night....MMMMMmm MMMMM good!

Awesome stuff. I've seen this stuff at all of the oriental restaurants where I live. Its pretty popular in the Houston area. I like to mix it with ketchup and make a dipping sauce for fries and seafood. MMMmmm MMMmmm good!

In the Chicagoland area we call it Rooster Sauce. I guess its one of those Soda/Pop/Coke things, never thought it'd apply to hot sauce. This stuff is the best, the stuff pictured here is a paste, there is another version that comes with a twist off cap and is not as fine as the paste that comes in a squeeze bottle. The paste is more for squeezing on food and the sauce is more for mixing with other sauces(soy sauce and rooster sauce with a dash of sesame oil is great for dipping dumplings).

Haha, its hard to get used to that sauce. As an Asian I grew up with that stuff but some of my friends dub it "cock sauce" in reference to the rooster.

3 words... Fiery. Butthole. Death.
